Yes you can, What you need to do is go to iTunes, Preferences, Advanced and there you will see the place where your iTunes library is saved, just click change and then browse to the location of where your library is on your external, you just need to remember that before you start up iTunes that you have your external device plugged in, I do it myself for both my iTunes and my iPhoto libraries, no worries
