Yes you can. The good thing though is that most transmissions have a vent on the top of the transmission that will allow excess fluid to run out. This keeps the tranny from building up too much pressure and blowing seals and such. If it is just a little over then it will be okay. If it is a lot overfilled You really need to drain some out. You can either pull in through the check tube or unbolting part on the pan and letting it come out that way. Good luck.

If it is an automatic, the fluid should be at operating temperature. The transmission in park and the engine at idle. Remove the dipstick and wipe it dry and check the level. Do not overfill.

I had the same questions, I contacted Izuzu and it is not servicable by you and I. It has to be checked by the service center by raising the vehicle and removing the bolts as in replacing the transmission fluid. This was on the 97-99's.
