Dried cells of microorganism like Algae, Bacteria, actinomycetesand Fungi are being used since the ancient times as food.Erlier it was known as Microbial protein ,term microbial protein was replaced by new term called Single cell Protein in 1967 during the first International Conference on Microbial protein. Criteria for coining this term was the single celled habit of microorganisms used as food and animal feed. Algae like Spirulina has high protein content such as 85%, Mushrooms and other Microorganism such as Lactobaccilus and streptococcus Candida utilaris etc has protein content as high as 43% to 85%.
