I do - I usually slice them and fry them in some olive oil.

Cooked potatoes will generally keep for a week in the refrigerator. If they have not been refrigerated, then plain "dry" potatoes are probably still safe to eat the next day (especially if fried in olive oil! :-) ). Potatoes that have been mixed with dairy products (like sour cream or butter) probably should not be consumed after a day without refrigeration.

Can you roast cube sized potatoes overnight in the oven at 200 degrees or will they dry out?

This is not a good idea, you'd get bad results. If you want good roasted potatoes, take some new potatoes and boil them for 20 minutes just until they are slightly tender, not til they are fully cooked. You can let them cool, cut them up into pieces, and refrigerate overnight. Next day, pull them out, put them in roasting pan, sprinkle with a little olive oil, salt and pepper, and roast them at 500 degrees for half an hour. They're the bomb!
