Hi Yes you can but the best way is to part roast them and when it comes to finishing them later i.e reheating them bring them up to room temp and put the in the oven finish off nice and crispy hope this has help good luck

This is not a good idea, you'd get bad results. If you want good roasted potatoes, take some new potatoes and boil them for 20 minutes just until they are slightly tender, not til they are fully cooked. You can let them cool, cut them up into pieces, and refrigerate overnight. Next day, pull them out, put them in roasting pan, sprinkle with a little olive oil, salt and pepper, and roast them at 500 degrees for half an hour. They're the bomb!
