Spinach is a Fall crop you can grow on your farm only during that season. The only other way to get it would be to buy it from Marimba Farm. But Marimba Farm will only sell Spinach if the store is level two or higher. And even so it is only available in Fall. So whichever way you want to get it the season must Fall to get Spinach.

spinach root IS edible but only when cooked, It will most likely give off a very bitter taste though.
If they live outdoors they eat bugs along with chicken feed. If they are raised by a company they are kept in cages and only eat chicken feed. Outdoor (free-range) chickens also eat plants. In the summer, my chickens loved watermelon as a treat, and in the winter, fresh greens (like baby spinach) was their favourite treat.
