To use a double boiler for melting chocolate, fill the bottom pot with water and bring it to a simmer. Place the top pot with the chocolate on top of the bottom pot. Stir the chocolate occasionally until it melts evenly. Be careful not to let any water get into the chocolate, as it can cause it to seize.
You can try using more chocolate than milk. I haven't tried it yet. Mayb make a subsitute heavy cream by mixing 1/3 cup melted butter with 1 cup of milk. Use more chocolate than the heavy cream subsitute though or it'll be too watery. Hope this helps!
