Use equal parts of cream and milk to replace the same amount of half-and-half. Half-and-half is half milk, half light cream. Your substitute will have a little more butterfat than regular half-and-half, but will work in most recipes.
Half-n-half just might not be heavy enough for a recipe that calls for whipping cream.
If you find yourself in a pinch and you don't have heavy whipping cream, then try this instead:
INGREDIENTS:
3/4 cup milk
1/3 cup butter
1. Melt the butter.
2. Pour it into the milk, and stir.
3. Use in place of one cup of heavy cream.
This is an easy and cheap alternative that some say works even better than whipping cream itself!

Milk is better. Whipping cream makes it a bit weird. Actually, a mixture of both is good. If you are altering the recipe, it would be best to keep the same percentage of milk fat. Otherwise, the ice cream might not get hard, and the machine might not stop. So if you use half and half in place of some of the heavy whipping cream, you should also replace some of the regular milk with the half and half too.

I'm not really sure but I know you put the ingredients in and the ice and salt goes around it. Then it makes it cold and creamy.You don't make the cream, you buy it at your grocery store. Look for "Heavy Cream" or "Whipping Cream" (some recipes call for "Half & Half" instead of Cream).
