It depends on the phone and if it's a smart phone then what apps it has installed.
For example with an iPhone you can read the texts that have been backed up (with ios5 this can happen nightly via wifi) or an app can be installed on both pc and phone that allows access whilst both devices are connected to the same wifi network

There are sites out there (for parents) that allow them to look at texts sent from the childs phone to another phone. There is also one that allows that AND you can check your facebook messages...but it requires you to download a third party app.
Not sure if this would help but - one way would be to connect the phone to a computer. Use the computer to access the pictures in the phone - and change the attributes of each picture to 'read only'. Doing that means they can't be deleted - unless you re-connect the phone to a computer and reset the attributes.
You could use a dedicated printer - to hook-up your phone and print pictures direct from the memory.
