While North Carolina doesn't have a law prohibiting open carry specifically, there is a law about "brandishing of unusual weapons", of which firearms are categorized. Basically, it's legal until somebody complains. You'd probably have no problem carrying openly in, say, Holly Springs, but try that in Cary or Carrboro, and there's bound to be complaints about it.
