No, your parents can see all your conversations on your phone. They get a bill showing what conversations you've had. not all parents look though :) and when you think your messages are gone (if you've deleted them) there not gone, you can find them

Only if they get your phone. They can't check online for anything like that...I've tried on my Dad's account and his ex-gf's account when I was on her plan. There is no way they can see them, but don't put anything that you will regret in a text.

The text messages are stored on the network's computer - NOT your phone. They are simply downloaded to your phone when they're received. The police simply need to serve a warrant on the company, to have them print out your messages. The don't need your phone !
There is not currently a way to see your sent or received text messages online. You can always keep your text messages on your phone to see them.
Don't let you see any evidence. If there are text messages or letters, then delete the text messages, or hide your phone or something. You can hide letters or notes in a special spot where they would never think to find. Don't spend all your time with him, so spend some time with your friends so your parents can see that too.
