In one work, HS-SPME with a DVB/CAR/PDMS fibre was applied to study the volatiles in 12 Chinese brand soy

sauces, and a total of 80 compounds was identified, of which 34 volatiles were found common to all soy sauces.

Alcohols and acids made more contributions to the total volatiles in comparison with miscellaneous, esters, furans, aldehydes, ketones, phenols and pyrazines. Ethanol, 2/3-methyl butanol, β-phenylethyl alcohol, acetic acid, bu-tanoic acid and 3-methylbutanoic acid were identified as the major volatile compounds in Chinese soy sauces due to their higher concentrations.
