yes, this is the dominant theory. There is also a theory that coal comes from organic compounds naturally existing in the earth (look up "abiogenic petroleum"). There are problems with both theories, but the second is rarely even mentioned in schools today.

The main component of plant material is sucrose, glucose and cellulose. These are sugar molecules, and when they are heated, the Oxygen and Hydrogen atoms combine to form water. This evaporates away, leaving pure carbon, and with heat and pressure this is turned into coal.
