Complex carbohydrates in animals include glycogen, a structure similar to the branched amylopectin of starch in plants. Chitin is a structural polysaccharide that can be used to for exoskeletons. You'll also have polysaccharides combined with proteins and fats to form glycolipids and glycoproteins.
