Starch is not really a pure compound, it is a polymere of alpha-1,4 (in amylose) and, in other cases also [alpha-1,6 + alpha-1,4 (in amylopectin)], glucosidicly bonded D-glucopyranose molecules (20 - 10.000 monomeres).

Starches are made of sugar molecules hooked together in chains. The process of forming the chain involves the release of a water molecule. At the molecular level, sugars are carbon chains in which each carbon has a hydroxyl group (-OH) bound to it. Forming a starch involves removing an -H from a carbon on one sugar and an -OH from a carbon on the second. Then the second carbon binds with the O of the first:

-C-O-H + H-O-C- --> -C-O- + +C- + H+ + OH- --> -C-O-C- + H-O-H

Hydrolysis (hydro = water, lysis = spllitting) is the reverse of this reaction: a water molecule is added to the oxygen molecule that bridges the two sugars. The sugars separate with a hydroxyl group where the bridge was.
