"Instant" cities in the 1800s were cities that gained rapid urban growth very quickly. An example is Chicago, because of its newly implanted railroad system, their population went from under 5,000 in 1820 to over 100,000 by 1860. Utica, NY is also an "instant" city, because of it's huge urban growth after the opening of the Erie Canal in 1825. Between 1820 and 1830 New York's population grew from around 100,000 to over 1,500,000.
