I don't think she really did anything on the sail barge except for look out the window and, of course, kill Jabba before the barge exploded

Actually the throne was moved. Jabba dais is a repulsion sled and can be pulled quite easily from place to place. So when you see Jabba resting on the sail barge he is actually on the same throne he was on while at the palace and Leia's chain didn't need to be removed.

That question is completely pointless. When Leia was a slave she was still a political leader in the galaxy. She would not just decide to go be someone else's slave.

Finally, Leia's resistance to Jabba when she is first captured appears to be quite abandoned by the time she's on the Sail Barge, as indicated when Jabba tugs her chain from across the room, making her turn, run to him, leap up on the throne, and press close against him - an act that would require far too much activity on her own part for it to be a mere physical reaction (such as falling backwards, etc.) In all likelihood, Leia was held for 24-72 hours, during which time she was fitted for the costume, chained to Jabba, and forced into acts which disciplined her enough to come to him when he yanks her chain.

Why does Leia sit on Jabba's tail in the sail barge?

Well, I don't think anyone knows why exactly. But if you remember, he pulled on her slave collar chain to try and get her away from the window. Perhaps he sadistically allowed her to look out the window so she could get one last glimpse of her captured friends and give her a false sense of hope. After giving her a moment to imagine escape he cruelly pulls her back into her new life as his slave, tugging her back close to him, and reminding Leia that she was his forever.
