Not all medieval people went to church. We can know this because there were quite a few people who were not even Christians. There were pagans, even into the High Middle Ages, and there were Jews in many places in Europe. In Spain, Italy, and the Balkans, there were also Muslims. Also, one of the things reported in the Middle Ages was that there were places where the peasants were too remote to have access to clergy, and so went without, so we know the church was aware of at least some people who did not go to church, but could not do much about it.
