Meat in the colonies consisted of beef, pork, venison and goat, as well as wild birds, such as pheasant and turkey. Grilled meats were particularly popular. Fish, clams and other shellfish were plentiful.
Vegetables included many New World plants: peppers, corn, potatoes and various types of beans, in addition to the vegetables that had been brought from England like cabbage, turnips, carrots, celery, onions, leeks and a wide variety of herbs. Note that many of those are root vegetables that can be stored in a cellar for quite a while--no refrigeration! As often as not, though, vegetables were fed to the hogs.
Few colonists would eat tomatoes, thinking them to be poisonous, or at least unhealthy and unpalatable. The colonists also rejected sweet potatoes. Peanuts were available, but not particularly popular.
Wheat and corn were cultivated, and bread was a staple of the diet, as it has been throughout history. Oats and barley were fed to horses or used to make beer.
Many farms had chickens and at least one cow or goat, so eggs, milk, butter and cheese were available.
Fruits included apples, cranberries, peaches, Pears and various wild berries.
In many homes, cooking was done in a large kettle, so meats, vegetables and legumes would be combined into stews.
Overall, the colonial diet was rather heavy, centered around "meat, bread and beer", but people worked hard, so they burned off as many calories as they consumed.
