You could get it from different breeds of cows, or even from different species of mammals. Assuming that you mean milk from dairy cows, the breed and the alimentation of the cow may have some influence on the milk. But the main differences are due to processing, when the milk is pasteurized, homogenized (to avoid fat floating to the surface) and the fat content adjusted to suit consumer's preferences. Organic milk is produced from cows that don't receive antibiotics or other drugs, otherwise it should be the same as "normal" milk.
