Dyes and inks are separated using a method called chromatography. Basically you put a dot of ink or the dye you to separate on a piece of chromatography paper and stand it up-right. The ink spot or dye will spread across the paper and separate into different colours.

Because if you mix green and red light together (like the pixels of your computer screen) you get yellow. Mix all the colors and you get white. While if you mix pigments of red and green (like paint, or dyes or ink) you will get some dark shade of brown or purple or something depending on the actual pigments involved that is called subtractive. Mix all the pigments and you get black (or something close).
This merely depends on what color the ink is. Black ink is a mixture of at least 4 different colors.
