There are health restrictions (TB, typhoidm etc.) for restaurants, now citizenship restrictions for most jobs, and security restrictions for classified positions. Additionally some jobs require physical characteristics like certain weight or girth, color vision, good vision, the ability to taste or smell things, good hearing, physical strength, good stereoscopic ability. Some jobs require a certain intelligence level, the ability to deal with stress, the ability to make good decisions under stress. Some jobs require talent, too! It goes on and on....
