Parrot eggs are either fertile when they are laid or they are not fertile when they are laid. They have to be fertile and properly incubated in order to hatch.

How many eggs do birds lay?

You need to be more specific as to the type of bird. Also, are you referring to eggs laid at once (in a "clutch") or over the lifespan of the bird? The typical number of eggs that a bird will lay varies considerably from species to species. Though, for practical reasons, birds cannot lay more than about 20 eggs at once - whereas reptiles (the other main hard-shell egg-laying group) can lay multiple dozens of eggs at a time.

You don't really need gloves, you are not going to leave enough scent to cause a problem. If the bird is sitting on the eggs, why do you need to touch them? Better to just leave well enough alone.

One without a mate? No, the egg needs to be fertilized or the egg would never hatch. Yes, female birds lay eggs on their own but they still need a mate to fertilize the eggs.
