Oranges contain acid in order to protect the fruit and its nutrients.

The acid in oranges provides a defense against bacteria, mold and yeast, which can't grown if the acidity is too high. Also certain nutrients, like vitamin C, are more stable in acid, and will not be destroyed as fast.

Acids are also important in foods because it gives sour flavors, determines colors, and may be able to chelate metals that can react with oils or other nutrients. They can also slow or stop the browning that occurs when fruits are cut. (For examples, how apples turn brown after cutting.)

  • citric acid (this gives it the acidic taste)
  • ascorbic acid (vitamin C)
  • DNA (all living things have this)
  • amino acids
  • etc.
