Plant cells divide just like all somatic eukaryotic cells do through mitosis. Plant cells divide the cytoplasm between the two nuclei by forming a cell plate. This is accomplished by the formation of a cleavage furrow in animal cells. The newly divided cell is identical do the parent cell.

All cells are the product of cellular division, be they animal, plant, bacterial, etc. In most mature multicellular organisms, including plants, most cells are post-mitotic. That is, they have become specialized to carry out the physiological needs of the organism and are no longer able to divide. It is for this reason that most tissues retain populations of stem cells or progenitor cells to divide and produce new post-mitotic cells. So, while all plant cells are created by division, some in a mature plant will not divide.

Plant cells never change, if they did, the plant will die. It's like our cells don't change over time.

Nope. Not all of them. Same types may look the same, but most likely that they don't.

cells change over time like humans, they become fat, grow old and eventually die.

Yes. Plant cells undergo mitosis and cytokinesis, just like other organisms, including humans. This is how plants grow or repair damaged tissues.

Do plant cells specialize in the same way animal cells do?

Plant cells do specialize but not in the same way as animal cells. Animal cells have specialized cells such as nerve cells, reproductive cells or muscle cells etc. Plant cells do not have any of those. But Plant cells have other specialized cells such as photosynthesis cells, epidermal cells etc. Both Animal and Plant cells have specialized cells that perform a specific function to keep the cell/organism alive.
