I use mung beans and alfalfa - very tasty and crispy in salads and stir-fry. I keep 3 or 4 jars of each going at about 2 - 3 day sowing intervals so I guess it is about 10 days for mung beans and about 7 days for the alfalfa from starting them to eating them.
