Once in a while this happens, but not nearly as often as the students think it does. It's not terribly uncommon for a student to know more about some particular small portion of the subject than his or her teacher does (though, again, less common than many students believe), but the teacher will almost always have a much broader knowledge of the subject.

Occasionally a teacher will be teaching outside his or her original field, and in those cases it's a bit more likely that a student might have knowledge the teacher doesn't. My high school chemistry teacher had been a Biology major, so was somewhat weak on the more esoteric topics in physical chemistry (and admitted it), but still knew more than any of the students in general.

Substitute teachers are an entirely different matter. Substitutes usually are just required to have had some college courses, which may not have been at all related to the topic of the class they're substituting for, and it's fairly common for a substitute to be pretty much limited to reading the actual teacher's lesson plan and hoping it makes sense to the students in advanced classes.

I think the teachers who see students as individuals, look them in the eye and greet them are more well liked. Setting expectations and followup with grading practices so that students know that they are doing well is also an admired trait. Interesting, surprising lesson plans are nice, but without the personal touch probably are neutral in effect.
