They certainly should know more than their students in the subject matter they are teaching. However, this does not necessarily mean that teachers know more than their students in every area.
It depends on the teacher. Some know much more than 18 year old students. Other English teachers do NOT know infinitely more than 18-year-old students. However, mylar balloons is not a topic that most adults really think about a lot.
Students like teachers that are not strict. Teachers that teach but in a fun way are liked more than others.

No, they do not. No one knows everything. In general, teachers do know more about their chosen subject than most people do, but, particularly depending on what "level" they're teaching at, they may not know more than someone who is actually workingin that discipline.
I think the teachers who see students as individuals, look them in the eye and greet them are more well liked. Setting expectations and followup with grading practices so that students know that they are doing well is also an admired trait. Interesting, surprising lesson plans are nice, but without the personal touch probably are neutral in effect.
Some dance teachers have another job other than teaching. Also, many teachers work on their dances that they are teaching and/or add more to them. They also, may make up combinations for their students.
