In the backpack there is computer monitoring temperature so hot or cold liquids can be pumped through suit to keep astronaut comfortable as temps range from well as water for drinking and a tank of oxygen to breathe and a back up oxygen tank and in Apollo suits there included a pipe for going to the toilet.

Some take personal mementos, or little things that are personally meaningful, or small things that friends or relatives have asked them to take. The rest of what astronauts "pack" is determined by the ground crew, and generally relates to essentials for survival. Those materials, of course, include oxygen, water and food. Less so than in the past, weight of the launch vehicle is still very important. Astronauts do not get to determine much of what they take; there are weight limits.
