Being as there are a variety of pumpkins, I would have to say that possibly it might taste different, but at the same time, I myself have never tried the white type, so it might also taste the same. The only way to know for sure is to taste them and let me know.

That really depends on the pumpkin. Generally, larger pumpkins will have more creases. Larger pumpkins have more surface area, and are more likely to have a larger amound of creases.
