Should not be a problem at all as long as you refrigerate them properly, and then reheat before you serve (if you want to serve them warm, that is). From my experience I would say Yes. I've left a (Costco) apple pie (covered) on my counter. Within a few days mold grew on it. Costco apple pies are not factory made like boxed pies sold in the supermarket. Therefore they have a short shelf life. Boxed pies are sold non-refrigerated however, I still refrigerate them after opening.
Most pies are not covered in French cuisine (and keep being simple tarts, called 'tartes'), but a few salted recipes (vegetable and / or meat-garnished pies) have a crust covering. They are called 'tourtes'.
