I don't know exactly how KFC does it, but to make french fries that will cook up crisp you need to blanch the potatoes first. Cut the potatoes however you want them -- skin on or off, thick, thin -- etc. Boil the cut pieces in salted water for 4 or 5 minutes, then immediately plunge them into cold water to stop the cooking process. If you want to give them a sweeter, crunchier texture soak them in a sugar water solution for 15 minutes. Pat dry on a paper towel and freeze. Cook in hot (375 degree) oil until golden brown.
