No, sorry to disappoint you. That helmet never comes off. According to an interview from the bungie essentials disk, they think master chief goes well as a sort of faceless character because it leaves you to imagine what kind of hero lies inside. Or something like that.

If they put a face to the character, fans can't imagine that they ARE Spartan John-117, the Master Chief. At that point they're just controlling someone else, not being the character.
