While the Catholic Church will only canonize members of the Catholic faith, a saint is anyone wo has earned a place in Heaven. As Pope Francis recently stated, even an atheist may make it to heaven if the person has lived a good life and followed their conscience.
We also have St. Joseph, John the Baptist, St. Anne, St. Joachim and several others who are considered as saints even though all were Jews and never were Christians.
