It doesn't have to be but it does need to be well covered and sealed or it will dry out. And if it wont be eaten within the next couple of days then yes refridgerate.....but yet, freeze it. It will taste almost as good as fresh baked if you microwave it for a few seconds after it has been sitting out, refriderated, or even frozen. depending on how long it will be before it is eaten, you can keep it in any one of these ways as long as it is properlly sealled.

No. It makes the butter hard and changes the texture. Leave it loosely covered on the counter.
