Most cheese these days is sold in rectangular slabs, more or less similar to the standard box shape.
Any other shape of box is awkward to make,doesn't stack well, and wastes space in transport.
So, far from being "cool", this would actually be a ridiculously dumb move on at least two counts.

You can substitute ricotta cheese for cottage cheese. I don't think it would work with cream cheese.

Think of 4 squares of cheese the size of dice cubes. That would be one ounce.
I think 4 ounces is enough as a side. That would mean about 38 pounds of mac'n cheese.
