A 1991 Grand Prix would have come from the factory with an AC system which used R-12 refrigerant... which is probably what you meant by "old". If you're not the original owner of the vehicle, I would recommend having a refrigerant purity test done to find out whether or not the system was changed over to the "new" R134a - most conversions of the sort were done in a manner cheaper than what's recommended for such conversions, and thus, they will often retain the R12 schrader valves.
