To make the old Betty Crocker fruit-slice cookies, combine in a bowl:
1cup softened, unsalted butter;
1 cup sugar;
1/4 teaspoon vanilla
2 eggs
Mix until well blended. Add 3-cups all-purpose flour and a dash of salt.
Beat until a soft dough forms. Shape dough into a ball and divide into 3-equal portions.
Place one portion of dough into a bowl, and add 1 1/2-tablespoons grated orange zest, 1-teaspoon orange extract, and enough red and yellow food coloring until an orange color is achieved. Mix well, remove from bowl and wrap in plastic wrap.
To the second ball of dough add 2-teaspoons grated lemon zest, 1-teaspoon lemon extract, and a few drops yellow food coloring. Remove and wrap in plastic wrap.
Leave the last ball of dough plain, wrap in plastic wrap.
Chill all 3 balls for at least an hour. Shape each ball of dough into a roll about 5-inches long. Roll the ball of plain dough into a rectangle. Place the roll of orange dough on the plain dough and roll the plain dough around it. Cut away the excess plain dough. Repeat with the lemon dough. Place orange and yellow sanding sugar in 2 separate plates. Roll each log in corresponding sanding sugar. Wrap each log and refrigerate 4-hours.
Once chilled, preheat oven to 400-degrees. Cut each log into 1/4-inch slices, bake 6 to 8-minutes.
