The preparation doesn't need any addition of energy sources as with frying, and doesn't cause loss of liquid (like evaporation), which doesn't reduce volume and hence not concentrating the fat. The amount of fast carbohydrates is low. So ceviche doesn't cause extra energy accumulation and is good food if one wants to be careful with one's weight. Preferably served with potatoes, sweet potatoes or maize (corn) for a balanced meal.
Depends what kind of fish you use to make it. A lot of Peruvians eat shark ceviche and shark doesn't really have fat.
