There are too many conflicting ingredients and flavours in the Risotto al Funghi for people to reach an agreement over which wines will pair with the meal.I recommend trying an Italian white wine with your meal. It depends on the quality of wine. If the chardonnay is "Yellowtail" for example, it will not age very well.
