This is a highly debated question. There are too many conflicting ingredients and flavours in the Risotto al Funghi for people to reach an agreement over which wines will pair with the meal.
I recommend trying an Italian white wine with your meal. Otherwise I believe an Alsace Pinot Blanc or White Rioja will work very well with the dish.

Basically mix the sausage and mozzarella into a bowl with bread crumbs. Stuff the chicken and hold together with toothpicks. Put in pan and add either white wine or chicken broth. Season with pepper and bake at 340 degrees for 40 minutes. Serve with whatever pasta and sauce you choose. I prefer it with a butter garlic sauce.
