Granite is one of the toughest stones in the world and will not be affected by knives. After cutting directly on my granite countertop, I have experienced that my knives get dull after a few uses only. So cutting directly over a granite countertop will not affect the countertop material but it will affect the sharpness of your knife. They can be. Granite being a natural surface is porous and can absorb liquids. Even if the cleaning product does not directly harm the counter top, it can be dangerous to people, the surface being a food prep area.
