Latex paint should be applied in a well-ventilated area. Make sure to open a window or turn a fan on in the room when applying the paint. After a couple of days the smell of the fresh paint will go away. Then it will be fine for the baby.
Latex paint does on occasion, but based on a lot of outdoor painting I've done, it's a minor problem with latex. It can be a notable problem with oil based paint, however, as the linseed oil smell is attractive to many insects.
What a nightmare you just encountered, huh? The latex is going to want to peel, and keep peeling. Short of sanding all the paint off that you just applied you can apply a coat of shellac (primer/sealer by Binzer) directly over the peeling latex paint. It dries very quickly and has an awful smell but it will take care of the peeling paint problem. I bet you will never paint over oil again.
I don't know... seriously. But I think oil paint is more non-sticky and the texture is like oil unlike latex. oil paint is usually more durable and can be washed to get stains off. oil paint takes a good 18 hours to really dry .the smell is not good for you and even worse is the paint thinner you use to clean up. if you should spill some on the rug you'll be high as a kite trying to get it off with paint thinner. latex needs to be repainted sooner than oil but that is really the only draw back to it. you can get odor free latex, it drys to the touch in an hour (cured in 12 hours) painting tools clean up with water if you spill some on a rug can be cleaned up if you see it as soon as it spills apples and oranges I've used both.

* We have five senses ... sight, audio (hearing), smell and taste and touch. Many people like the smell of certain things and it doesn't mean they need to run off and see a therapist. As a kid I use to like the smell of tar or gasoline. Now, I can't stand the smell of either odor. There is no particular reason why a person enjoys a certain smell (it's the brain and we know so little about it) and unless allergic to latex it's not dangerous to your health.
Fish release a very strong ammine smell. It really is its own urine, you might know.
Sometimes smells are strong enough you can taste them. it can even be vise versa.
Smelllllllllllll is a way of writing about really strong smell, probably a very nasty smell too!
Vinegar is a good odor absorber, especially for cigarette smoke, however, you will have the vinegar smell to contend with. Another suggestion would be to add 1 tablespoon of white vanilla to your latex paint ( this will not work with oil based paint). The vanilla will mask some of the odor and make the paint smell less strong. Another good odor absorber that doesn't have any smell are charcoal briquettes, just be sure you get the plain ones not the ones that have been treated (Match Lite) with starter fluid. Just place them around the house (works especially well in the basement) in bowls and let them do the work. Handylady
Slush latex, also known as mask and slip latex, is a thick cream colored liquid with a strong ammonia smell.
