Best Answer

Best to use lemon zest to flavor whipping cream. While the lemon juice will not curdle the whipped cream it will effect the peak and thickness.

Could cream and lemon juice be substituted for sour cream?

Sure, but it will curdle it.

Why did your potato gratin curdle?

Gratins will curdle if anything acidic is added to the milk or cream. For example lemon juice and vinegar will make milk curdle, as will some alcohols. Sometimes cooking cheese based dishes on a very high temperature will make the cheese overcook and look slightly odd, but that's different to curdling.

Is there a way to add fresh lemon juice to cream sauces so that the sauce doesn't curdle?

To make lemon cream in a mixing bowl you mix together cream with a little sugar and then whip it at full speed until peaks form then add the lemon juice and rind and fold it into the mixture gently with a desert spoon that you have chilled in the fridge

Is lemon juice a thickener ner?

You want to make a cake with cream cheese icing and you have no cream cheese what can you substitute for cream cheese?

You're probably best going and buying cream cheese, since anything else would produce a weird approximation of a "cheesecake". Although you can make your own ricotta (which can be substituted for cream cheese) by heating up milk (whole or semi-skimmed) on the stove until it boils, taking it off the heat and adding 1tsp of lemon juice or vinegar. At this point it will curdle, and you strain it through a sieve lined with muslin or kitchen towel to catch the "curds", which is ricotta cheese. (Do NOT continue to heat the milk with the lemon juice added - the mixture will explode on the hob). Let the cheese cool and use as for cream cheese.

If you don't have a lemon for a teaspoon of rind can lemon juice be used and how much?

It really all depends on the recipe. In, say a cake batter, the addition of lemon juice instead of rind is perfectly ok as an approximate (though the fragrance and distribution of flavour isn't quite the same). You should be careful in recipes and take into account the high acidity in lemon juice and how it will react chemically with other ingredients. It may cause cream sauces to curdle, for example.

Is lemon juice or vinegar better for curdling?

I have tried both, they both work to curdle whole milk but I found the lemon juice a better choice as the resulting paneer gets a more complimentary flavoring from the lemons then the vinegar.

Did nekot make a lemon cream cheese cookie?

Lance snacks used to make lemon cream cheese nekot cookies but they were discontinued in 2006. I was working at a convenient store at the time and I remember asking about the Lance rep about them. They were my favorite.
