Do you realize that liquid nitrogen is so cold that it will cause frostbite? It is used to remove lesions that are not cancerous and ones that are cancerous. Just what reason would someone use this on the nose? Just to remove fat and collagen? The collagen forms the movable "tip" of your nose. Be sure that the person goes to a doctor specializing in this sort of surgery. It is surgery! Ask this question of her.
