Basically, in some metals the crystal pattern in the metal changes when heated- and if rapidly cooled, that pattern is sort of "locked in" to the metal. If that locked in pattern is harder or more brittle than the earlier state, the metal has become more brittle. However, heating and then SLOW cooling can make some metals less brittle- it is called annealing.
