Accent seasoning, also known as monosodium glutamate (MSG), is considered safe for consumption by the FDA and other major health organizations when used in moderate amounts. However, some people may be sensitive to MSG and experience symptoms like headaches or sweating. It's important to be mindful of your own body's response to MSG and adjust your usage accordingly.
You CAN substitute Poultry Seasoning for Thyme, if you are not a fan of Thyme, and do like the flavor of Poultry Seasoning; however, if you are substituting it because you do not have Thyme, it is not going to have the same effect. Poultry Seasoning contains: Sage, Rosemary, Parsley, Marjoram, Salt, Pepper, and Onion Powder. If you DO substitute it, keep in mind that your recipe is calling for a specific measurement of Thyme, and it would not take as much of the Poultry Seasoning in the recipe. Also, you will need to account for the extra salt, if the recipe calls for salt, make sure you don't add quite as much as it calls for, since the Poultry Seasoning will add more salt to the recipe.

Sure can !!Poultry seasoning usually consists of a mixture of mint family (Lamiaceae) herbs, typically containing at least sage and thyme, along with one or two other mint family members such as marjoram, savory, parsley, basil or tarragon, and, less commonly, bee balm, catnip, lavendar or oregano (the Italien-style spaghetti sauce herb). For aroma and flavor, these herbs are all variations of each other, and make for great individuality in cooking. Experiment !!
Rosemary is appropriate for most meats, particularly for poultry and pork. Rosemary can be added to stews and soups, or crushed and blended into savory sauces. It is part of the standard "poultry seasoning" mix.
I don't know where you are, but in Ohio there are still poultry seasonings. However, if the seasonings for poultry foods are legitimately gone a probable cause of that could be the contaminate salmonella and it can really mess you up. So if people are reaching their hands into the containers after touching their chicken they are cross contaminating getting salmonella into the once sanitary seasoning causing more sickness in a household kitchen. Hope that helped
There is no real substitution for fresh sage, but if you don't have dried/rubbed sage, try using poultry seasoning instead.
