The simplest rule, and probably the best one is : look at the colour of the vegetable. Vegetables that are red or '''''dark''''' green tend to contain vitamin A, or beta carotene which the body can easily convert to vitamin A.

Green vegetables are high in carotenoids, which your body transforms into vitamin A. For this reason, some researchers no longer consider vitamin A to be a true vitamin, because your body does not need it in its ready-made form (retinol), but can easily make retinol from carotenoids in your food.

Normal varieties of tomato are not overly high in vitamin A but you can buy varieties that have 40 times the normal amount of vitamin A. Tomatoes are very high in antioxidants including: lycopene, carotene and others.
