You will know when the coffee mate has gone bad, because it will curdle, change color, or smell badly. You can usually tell when it is starting to go bad, well before this point because the creamer will not integrate with the coffee immediately, and will leave "rings" on top of the coffee until it is stirred in. However, it is still safe to consume at the "ring" stage. It can be stored even longer in the freezer, but this is not recommended as some separation of the product may occur after thawing.
