To do this they would survey the people affected quizing them about what they had eaten and drunk. Epidemiologists would also look at defining the exact strain of microbe which caused the disease for example Campylobacter jejuni can be further classified by it's flagellin type, heat stable antigen reactions and bacteriophage resistance. These identify the strain so help to separate unrelated outbreaks in a community.
