There are several ways to use flip-flops to eliminate contact bounce. One way is to pull the contacts up with a resistor and connect them to the set- and reset- inputs of an SR flip flop. On set/make, the flip flop will change state, but it will not change state just because the contact bounces. On reset/make, the same thing happens in reverse. The result is that the flip flop will follow the switch without bounce.

In order for this to work, however, the switch must be a double throw, break before make, type of switch; and the bounce must not include bouncing that touches the contact just broken - it can only include settling bounce off of the making contact.

If the switch is a common bus bar design, say the keys on an electric piano, you could use two different voltages on the bus bars, and sense the voltage of the contact, differentiating between up, down, and in between. This is more complex, but the philosophy is the same.
