To find the first letter of a single name is easy. You can get the first letter starting at the left of the text. If the name was in cell B3 then your formula, which can be any cell except B3, would be:
=Left(B3,1)
If it is multiple names, then that is more complicated because of the way names can be structured, like finding where in the cell the second name begins and the fact that names can be double-barrelled. It is impossible to teach a computer to differentiate between these names, because for example, some names can be both a first name or a surname.
The best thing to do if you want to get initials from a first name and a surname is to put the parts of the name into different cells and use the previous function on each of these and put a full stop and a space between them. So if the firstname was in B3 and the surname in C3 then the formula in another cell would be:
=Left(B3,1)&". "&Left(C3,1)
It is James Naismith but he later adopted the initail "A" for his middle name. So it is James A.Naismith

Not sure if you want to know how to export data from Excel or import data into Excel. Either way, the answer depends on what you are trying to do. You can export data from Excel by using the SaveAs option to save the file in a format you choose. If you are trying to use another program to extract data from Excel, you will need to use the options available to that specific program.
You might be able to use C to extract data from an Excel file, but there is no easy way to write a program to create an Excel file.
